EDAMAME Salad




Ingredients:

2 cups Frozen Shelled Edamame
1-1/2 cup Fresh Corn Kernels
1-1/2 cup Mango Cubes (1 med)
1 cup Tomato Chopped
½ cup Red Onion chopped
1 cup Black Beans
2 Tbsp. Fresh Cilantro chopped
1 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Lime Juice
Pinch of Salt
Pinch of Ground Black Pepper

Preparation:
1.) Prepare Edamame per package directions. Drain and rinse under cold water.
2.) Transfer to large bowl.
3.) Stir in corn, mango, tomato, onion, black beans, cilantro, oil, lime juice, salt and pepper.
4.) Toss well.
