Juicy Crab Cakes



Ingredients :

4 cans Lump Crab Meat or 1-1/2 lbs fresh picked (if you've got skills)
1 Green Onion
1 Tbsp. Dijon Mustard
1 ½ cups finely crushed low fat or fat free Ritz crackers (about 40)
1 cup low fat Hellman’s (or Best Foods) mayonnaise
¼ cup fresh squeezed lime juice
¼ cup olive oil
¼ cup fat free sour cream
2 tsp. grated lime peel (wash limes thoroughly)
1 tsp. chopped cilantro



Directions :

Combine Crab Meat, green onion, mustard and only 1 cup crushed crackers, ½ cup mayonnaise, and 2 tablespoons of lime juice and mix together. Shape into 6 patties and coat with the remaining cracker crumbs.

In a large skillet, heat olive oil over medium heat. Cook Crab Cakes for approx. 3-4 min on each side or until lightly browned. Place on serving platter.

Juicy Dipping Sauce- combine sour cream, lime peel, remaining mayonnaise and 2 tablespoons of lime juice and whisk until well blended. Drop a dollop of sauce onto each cake and sprinkle with a pinch of cilantro.
For those who like it extra juicy, slice a lime and place wedges on platter for squeezing.

Lisa Little’s Sassy Tabbouleh Salad



Ingredient's:

2 cups cooked quinoa
1 red bell pepper, chopped finely
1 medium tomato, seeded and chopped finely
1/2 bunch parsley, finely chopped
2 scallions, chopped
1/2 - 1 jalapeno, chopped (use more or less based on your taste preference)
1 cup cooked chickpeas
drizzle of extra virgin olive oil
squirt of lemon juice 


  Directions:

Layer all ingredients in a serving dish, starting with the quinoa and ending with the chickpeas. Refrigerate until ready to serve. Just before serving, drizzle with olive oil and squeeze fresh lemon juice over the salad.

Elf size Spinach Frittata’s




Ingredients:

1 cup low-fat ricotta cheese
¾ cup grated Parmesan cheese
2/3 cup chopped Fresh Mushrooms
1 package frozen chopped Spinach
1 egg
½ teaspoon dried Oregano
¼ tsp. Sea Salt
¼ tsp. black Pepper
½ cup shredded Prosciutto

Directions:

Pre-heat oven to 375 degrees
In a small bowl, Combine the first 8 ingredients and mix thoroughly.
Place a pinch of Prosciutto in each of 24 greased Miniature Muffin cups. Then fill cups ¾ of the way full with the spinach/cheese mixture.
Bake for 20-25 minutes or until a toothpick comes out clean. Carefully run a knife around the edges of muffin cap to loosen.
Serve warm

Innocent Sweet and Sour Meatballs




Ingredients:

For the Meatballs:
1 lb. ground turkey
1 cup cooked brown or wild rice
1 small can crushed pineapple (drained)
½ cup red onions diced
2 Tbsp. sodium free soy sauce
1 tsp. ground ginger

For the Sauce:

¾ cup chicken broth
½ cup chili sauce
3 Tbsp.  rice vinegar
2 Tbsp. brown sugar
2 tsp. cornstarch
½ tsp. ground ginger

Directions:

Preheat oven to 350 degrees. (360 for higher elevation). Line a baking sheet with aluminum foil and spray with vegetable oil cooking spray.
Mix all ingredients For the Meatballs very thoroughly in medium mixing bowl. Shape meatballs and place on baking sheet (should make approx. 30 meatballs). Bake for about 25-30 min or until cooked through.  Transfer meatballs to a serving dish and cover to keep warm.

Combine all the For the Sauce ingredients together in a small saucepan and stir constantly until cornstarch is dissolved. Place on stove over medium heat and occasionally stir until mixture starts to boil. Reduce heat to low and stir until mixture thickens. Remove from heat and pour sauce over meatballs. Mix gently to coat all meatballs.
Serve while still warm and use toothpicks to eat with.

Turkey Hummus Wrap




Ingredients:

3Tbsp. of your favorite Hummus (My fav is Roasted basil/Tomato)
1 Whole Wheat (or gluten-free) Wrap (it’s really just a tortilla)
3 oz. white turkey breast meat
1 slice avocado
¼ cup alfalfa sprouts
2 slices tomato
Pinch of romaine lettuce

Directions:

Spread hummus on wrap, layer turkey, avocado, sprouts, tomato and lettuce then roll it up!
It’s especially tasty when served with fresh fruit like ½ cup of watermelon!

Cerveza-Marinated Chicken Skewers




Ingredients:
1 lb. boneless, skinless chicken breasts, cut into 1 “ chunks
1 cup Mexican beer
2 Tbsp. fresh lime juice
2 Tbsp. olive oil (I like to use jalapeno flavored from Temecula Olive Oil Co.)
1 tsp. paprika
1 tsp. dried oregano
1 tsp. sea salt
Ground pepper to taste
Use Nonstick veg. oil cooking spray

Directions:

Combine beer, lemon juice, olive oil, paprika, oregano, salt and pepper in a zip-lock bag then add chicken. Squeeze the air out of the bag , seal tight and shake til chicken is completely coated. Place in refrigerator for an hour, turn the bag occasionally.

Transfer the marinade (Not the chicken) from the bag to a small saucepan and bring to a boil. Reduce heat to low and simmer for 5 min. Turn off heat.  Place the chicken in marinade and let sit while you soak the wooden skewers in water for 5 min. (If using metal skewers no need to soak J)

Spray the broiler or grill with non-stick cooking spray, before heating. Then heat to high.

Divide the chicken among skewers (placing approximately 2 chunks on each skewer.) Grill or broil the skewers 4 inches from heat until lightly brown, about 3 minutes. Turn chicken and brush with the reduced marinade. Cook chicken until thoroughly done, about 2 min. each turn and brush marinade each turn.

Serve immediately
