Ingredients:
For the
Meatballs:
1 lb. ground turkey
1 cup cooked brown or wild rice
1 small can crushed pineapple (drained)
½ cup red onions diced
2 Tbsp. sodium free soy sauce
1 tsp. ground ginger
For the Sauce:
¾ cup chicken broth
½ cup chili sauce
3 Tbsp. rice
vinegar
2 Tbsp. brown sugar
2 tsp. cornstarch
½ tsp. ground ginger
Directions:
Preheat oven to 350 degrees. (360 for higher elevation).
Line a baking sheet with aluminum foil and spray with vegetable oil cooking
spray.
Mix all ingredients For the Meatballs very thoroughly in
medium mixing bowl. Shape meatballs and place on baking sheet (should make approx.
30 meatballs). Bake for about 25-30 min or until cooked through. Transfer meatballs to a serving dish and
cover to keep warm.
Combine all the For the Sauce ingredients together in a
small saucepan and stir constantly until cornstarch is dissolved. Place on
stove over medium heat and occasionally stir until mixture starts to boil. Reduce
heat to low and stir until mixture thickens. Remove from heat and pour sauce
over meatballs. Mix gently to coat all meatballs.
Serve while still warm and use toothpicks to eat with.
